This recipe does take some time to make, but it's well worth it. And it's mostly hands-off, considering most of the time is spent waiting for the bananas to freeze. Frozen banana pieces process into a delicious silky mixture with the consistency of soft-serve ice cream. It's flavored with vanilla extract, chocolate chips, and sliced toasted almonds. For a firmer texture or to make this "ice cream" ahead of time, you can transfer blended mixture into an airtight container and freeze until ready to serve. Keep in mind that you should allow it to soften for about 10 minutes at room temperature.

Ingredients

Banana

4 large, ripe

Vanilla extract

½ tsp

Semi-sweet chocolate chips

¼ cup(s)

Sliced almonds

2 Tbsp, toasted

Instructions

  1. Peel bananas; cut into 1-inch chunks and place in zip-close plastic freezer bag. Seal and freeze until frozen solid, at least 2 to 3 hours.
  2. Place bananas in food processor; puree, scraping down sides with rubber spatula. Add vanilla and pulse to combine. Transfer to bowl and stir in chocolate chips. Sprinkle each serving with 11⁄2 teaspoons toasted almonds. Serve immediately.
  3. Serving size: 1⁄2 cup “ice cream” and 1 1⁄2 teaspoons almonds
